Low-acid foods (those with a pH above 4.6), such as vegetables, beans, soups, meats, poultry, and seafood, must be pressure canned to ensure safety, the information states. Botulism bacteria thrive in low-acid, oxygen-free environments, making proper pressure canning essential for keeping your home-canned foods safe and tasty.
The McClain County OSU Extension Center wants canners to know that they offer free dial gauge testing for the following brands: Presto, National, Magic Seal, and Maid of Honor.
